Lebanese food is super healthy, full of fresh flavors and delicious; however, the wheat and beans it contains can cause bloating and stomach discomfort, especially when you have food sensitivites. Luckily, I found a wonderful substitute to the bulgar wheat (the main ingredient in tabouli) - cauliflower! This recipe is full of fresh herbs and vegetables, making it a wonderful side dish to pair with chicken, lamb or beef. Tabouli is a vegetarian dish, and made with cauliflower, it is Paleo too!
Ingredients:
1 bag of frozen cauliflower rice, thawed
1/2 medium cucumber, diced
2 roma tomatoes, diced
1 1/2 cups Italian parsley, chopped
1/4 cup fresh mint leaves, chopped
2 scallions, light green & white parts chopped
2 garlic cloves, chopped
2 TBSP extra-virgin organic olive oil
3 TBSP fresh squeezed lemon juice
1 tsp salt
1/4 tsp pepper
Directions:
Put thawed cauliflower rice into a large bowl. Chop cucumber, tomatoes, parsley, mint, scallions and garlic and add to the bowl.
Add olive oil, lemon juice, salt and pepper and stir to combine. Chill and serve as a delicious side dish!
