Do you get sick of eating the same eggs for breakfast everyday, are you running out of breakfast ideas, or are you looking for something you can make in the morning that is lightning fast to prepare and cook? Khai Jiao (or Thai Omelette) is a traditional Thai recipe that is a staple in Thai cuisine. It can actually be made for any meal (not just breakfast) as the main dish or side dish. It is also made of very few ingredients and is very inexpensive to make, yet very delicious! The texture is crispy on the edges and soft and fluffy on the inside. Khai Jiao can be combined with fresh herbs, seafood or meat to make it a more substantial meal; however, it is perfectly satisfying on its own or topped with a few dashes of Sriracha sauce for a spicy kick. In this blog, we will give you the basic recipe, so you can use your creativity if you wish to jazz it up. I also tweaked the recipe just a bit to make this recipe healthier and Paleo-friendly!
Ingredients:
2 eggs
1 tsp fish sauce
1/2 tsp fresh lime juice
1 TBSP arrowroot starch
1 TBSP water
1/2 TBSP coconut oil
Directions:
Heat a wok on high heat and add coconut into center of pan. Whisk all ingredients together with a whisk or fork until bubbles start to form. Once oil is hot, pour the mixture into the wok. Cook for 20-30 seconds, flip with large spatula and cook another 20-30 seconds or until slightly browned on each side. Plate it, top with sriracha (if desired) and dig in!
