Shepherd's pie was one of my favorite comfort meals as a child, so I decided to make a healthy version that is just as tasty, lower in carbs, and super simple to make (no baking required). I recently discovered hearts of palm mash, and I am obsessed! It is an awesome low-carb alternative to mashed potatoes and a healthy comfort food. With this recipe I use bison (which has a wonderful flavor and leaner than beef), but you could also substitute it with ground turkey, beef or lamb. This recipe is gluten-free.
Ingredients:
12 oz. ground bison
1 bag organic frozen mixed vegetables
2 packages Natural Heaven creamy mash hearts of palm
1 1/2 TBSP ghee
1/2 sweet onion, diced
2 tsp dried parsley
1 tsp dried rosemary
1 tsp dried thyme
1/2 tsp himalayan salt
1/8 tsp black pepper
1/2 tsp minced garlic
1 TBSP worcestershire sauce
Directions:
Boil 1/4 cup of water in a large sauce pan and add frozen mixed vegetables. Once boiling, turn to simmer and cover with a lid, cooking for 6 minutes. In another pan, heat to medium-high heat and add 1/2 TBSP ghee. Add diced onions and saute for about 3 minutes until they start to slightly brown. Add in bison, parsley, rosemary, thyme, salt and black pepper and cook until completely browned and no longer pink. Add in minced garlic and worcestershire sauce and saute for 1 minute. Add in cooked vegetables and stir. Heat up the hearts of palm mash in a pot with 1 TBSP ghee until hot. Plate the bison and and vegetables and add hearts of palm mash on top and dig in!
