Pumpkin Chocolate Energy Bites

It's the time of the year where you get the urge to eat pumpkin everything! This weekend I made a healthy and delicious pumpkin treat to satisfy the craving and give me an energy boost. This recipe is easy to make and you can freeze half for later to make it last even longer. These energy bites are a great healthy snack to have around or to take with you to work.


Ingredients:

  • 3 cups gluten-free oats

  • 1 cup pumpkin puree

  • 1 cup almond butter

  • 2/3 cup organic maple syrup or raw honey

  • 1/2 tsp cinnamon

  • 1/2 tsp pumpkin pie spice

  • 1/2 TBSP vanilla extract

  • 5 TBSP chia seeds or ground flax seeds

  • 1/2 cup coconut flakes

  • 1/2 cup chopped walnuts

  • 1/2 cup Enjoy Life mini dark chocolate chips

Directions:

Stir all ingredients together in a big bowl and form into balls. Freeze for 1 hour to set. Keep in the fridge in an airtight container for up to 1 week.
