In the autumn is when most of us start our baking. It also makes it difficult for many of my patients to avoid the temptation of baked goods and sweet treats. Flour and sugar can definitely pack on the pounds, so I wanted to offer an easy recipe for healthy and delicious apple muffins that is lower in sugar and free from flour. This recipe is also dairy-free and gluten-free! These muffins are super moist and yummy, and you would never even know they were the healthy version! This recipe is great for kids and adults alike and is full of delicious baked apples and all the autumn spices.
Ingredients:
1 cup unsweetened organic applesauce
1 cup peanut butter, almond butter, cashew butter or sunbutter
2 eggs
6 tablespoons organic raw honey
2 TBSP vanilla extract
1/2 tsp baking soda
1/2 tsp fine himalayan salt
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
2 cups diced Granny Smith apples (about 2 apples, finely chopped)
coconut oil spray
Directions:
Preheat oven to 400 degrees.
Spray a muffin pan with coconut oil spray or lightly grease with coconut oil.
Using a blender, add all ingredients except for the chopped apples and blend until smooth.
Stir in the chopped apples and fill muffin tin evenly.
Bake for 12 minutes.
Once muffins are cool, remove from the pan and enjoy!
