One of the hardest things to give up when you go gluten-free is BREAD!! While there are many gluten-free bread substitutes, many of them contain blood sugar-spiking ingredients that are not so healthy. The good news is you can make this easy, fresh baked, gluten-free bread that is fluffy, super low calorie and contains no carbs!!

Ingredients:
3 eggs, separated
2 oz. softened organic cream cheese
1/4 tsp cream of tartar
1 packet of stevia (optional)

Step 1:
Preheat the oven to 350 degrees. Cover a baking sheet in parchment paper.
Step 2:
In a big bowl, combine egg whites and cream of tartar. Use an electric mixer for a couple minutes to mix the ingredients together until stiff peaks form.

Step 3:
Combine the egg yolks, softened cream cheese and stevia (optional) together in a smaller bowl and whisk until the cream cheese is smooth and no longer visible.
Step 4:
Add the egg and cream cheese mixture into the egg white mixture by gently folding the ingredients, while not deflating the egg whites.
Step 5:
Gently scoop the mixture onto a cookie sheet with a spatula, dividing it into 5 or 6 rounds.

Step 6:
Bake for 25-30 minutes at 350 degrees until cloud bread is lightly browned. Let cool for a few minutes, add your favorite spread and enjoy this 19-calorie no-carb bread!

You can use the cloud bread to make sandwiches, or spread on some organic grass-fed butter or almond butter.
Alternate recipe:
You can skip the stevia and add garlic powder, herbs or spices for a more savory cloud bread.
