Broccoli Apple Salad

Broccoli is naturally loaded with vitamins, minerals, fiber and antioxidants, making it a powerhouse vegetable. It is a great source of vitamin C, vitamin K, phosphorus, calcium, and folate and it contains antioxidants lutein and zeaxanthin. Broccoli also has anti-inflammatory properties, improves heart health, improves blood sugar and boosts the immune system. This recipe is paired with granny smith apples which are beneficial for improving liver detoxification, gallbladder function, and gut health.

Broccoli apple salad is a wonderful side dish and a fantastic way to get extra fiber in your diet. This recipe is super simple to make and requires no cooking or fancy gadgets. It is also paleo, gluten-free, dairy-free, vegetarian, and vegan (when using vegan mayonnaise and omitting the honey). Each bite gives you a delicious and healthy crunch, chock full of nutrients!


Salad ingredients:

  • 2 heads of organic broccoli, chopped into florets (stems removed)

  • 2 cups organic shredded carrots

  • 1 granny smith apple, cored and chopped

  • 1/2 cup of chopped walnuts (or 1/4 cup roasted pumpkin seeds)

Dressing ingredients:

  • 1 cup avocado oil mayonnaise

  • 1/4 cup rice wine vinegar (or apple cider vinegar)

  • 2 lemons, juiced

  • 1 clove garlic, minced

  • 1 tsp raw honey

  • 1/2 tsp onion powder

  • 1 tsp salt

  • 1 tsp black pepper

Directions:

  • Add the salad ingredients into a big bowl and stir to combine.

  • In a smaller bowl, add the dressing ingredients and whisk until smooth.

  • Pour the dressing into the salad and stir well to combine.

  • Refrigerate for 1 hour before serving.
