This soup is wonderfully nourishing and low in carbohydrates. It is a healthy comfort food that is easy to make. This recipe also great for leftovers and tastes even better the next day!
Ingredients:
1 large onion, diced
4 cloves garlic, minced
1 lb. grass-fed organic ground beef
1 bag frozen cauliflower rice
1 head of cabbage, chopped
1 can or box of organic tomato soup
2 TBSP tomato paste
6 cups organic beef broth or bone broth
1 1/2 cups organic tomato juice
1 tsp paprika
1 TBSP worcestershire sauce
1 tsp thyme
himalayan salt & pepper, to taste
organic fresh parsley
coconut oil
Directions:
Heat 1 TBSP coconut oil over medium-high skillet and add chopped onion. Sautee until onion is slightly browned. Add ground beef and cook until no more pink is remaining.
In a large crockpot, dump in onion and beef mix and add all the rest of the ingredients in the pot (except parsley). Add salt and pepper to taste and mix all ingredients well. Cover and cook on high for 3-4 hours or low for 6 hours. Add parsley for a garnish and dig in!
